Gluten-Free Sweet Potato Casserole
This gluten-free sweet potato casserole is delicious and comforting, and it's great for any event. Adding warm spices and a crunchy pecan topping to sweet potatoes makes this recipe taste great.
Ingredients:
- 4 medium sweet potatoes, peeled and cubed
- 1/4 cup maple syrup
- 1/4 cup coconut milk
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup chopped pecans
- 2 tablespoons coconut sugar
Instructions:
Preheat the oven to 375F 190C
Place the sweet potato cubes in a pot of boiling water and cook until tender, about 10-12 minutes
Drain the sweet potatoes and transfer them to a large mixing bowl
Add the maple syrup, coconut milk, melted coconut oil, vanilla extract, cinnamon, nutmeg, and salt to the mixing bowl with the sweet potatoes
Mash everything together until well combined
Transfer the sweet potato mixture to a greased baking dish
In a small bowl, combine the chopped pecans and coconut sugar
Sprinkle this mixture evenly over the sweet potato mixture in the baking dish
Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and the sweet potato mixture is heated through
Serve warm and enjoy!
