Vegan Palak Tofu Paneer
Tofu is used in place of paneer cheese in this vegan version of the traditional Indian dish Palak Paneer. Tofu, spinach, and flavor-boosting spices abound in this creamy, flavorful dish.
Ingredients:
- 1 block tofu, pressed and cubed
- 4 cups spinach leaves, washed and chopped
- 1 onion, finely chopped
- 2 tomatoes, diced
- 3 cloves garlic, minced
- 1-inch ginger, minced
- 1 green chili, minced
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon garam masala
- 1/2 teaspoon chili powder
- Salt, to taste
- 2 tablespoons oil
Instructions:
In a pan over medium heat, warm the oil
When the cumin seeds sizzle, add them
When the onions are golden brown, add them and saut
Saut the green chili, garlic, and ginger for two minutes
Cook the tomatoes until they become tender
When the spinach begins to wilt, add it
Pour the mixture into a blender, and process it until it's smooth
Put the mixture back in the pan and mix thoroughly after adding the spices coriander, turmeric, garam masala, chili powder, and salt
Give the tofu cubes a 5-to 7-minute simmer after adding
Modify the seasoning as needed
Serve hot with naan bread or rice
