Yogurt Coffee Cake
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup Greek yogurt
- For the streusel topping:
- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, cold and cubed
- 1/2 tsp ground cinnamon
- 1/4 cup chopped nuts optional
- For the glaze:
- 1/2 cup powdered sugar
- 1-2 tbsp milk
- 1/2 tsp vanilla extract
Instructions:
Preheat your oven to 350F 175C
Grease and flour a 9-inch round cake pan
In a medium bowl, whisk together 1 1/2 cups of flour, baking powder, baking soda, and salt
Set aside
In a large mixing bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy
Add the eggs, one at a time, beating well after each addition
Stir in the vanilla extract
Alternate adding the dry flour mixture and Greek yogurt to the wet ingredients, beginning and ending with the flour mixture
Mix until just combined
Pour the cake batter into the prepared cake pan and spread it out evenly
In a small bowl, prepare the streusel topping by mixing 1/4 cup flour, 1/4 cup granulated sugar, cold cubed butter, ground cinnamon, and chopped nuts if using until it resembles coarse crumbs
Sprinkle the streusel topping evenly over the cake batter in the pan
Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean
While the cake is baking, prepare the glaze
In a small bowl, whisk together powdered sugar, milk, and vanilla extract until smooth
Adjust the milk amount to achieve your desired glaze consistency
Once the cake is done, remove it from the oven and let it cool in the pan for about 10 minutes
Drizzle the glaze over the warm cake
